The American pine nut species are the most expensive pine nut species (American pine nuts shelled, run $30.00 - $40.00 per pound) and the pine nut is the world's most expensive nut.

The US (BLM or USFS) generally offers pine nuts at .25 cents per pound, add labor and shelling, the American Pine Nut becomes worth $30 - $40.00 per pound. It takes 2 lbs of in shell pine nuts to make one pound of shell pine nuts, so pine nut prices of $.50 lb with the going labor rate of $1.50 lb to harvesters. The raw material costs to produce shelled American pine nuts runs $3.50 plus labor and processing equiptment. (and not THAT much labor).

We wanted to create a machine that would allow a lot of people to engage in pine nut processing and a machine which would allow 5 star kitchens, coops, and food producers the alternative of freshly shelling pine nuts for their kitchems. The cost of inshell pine nuts runs on a wholesale level runs $9.00 - $12.00 per pound. Even with the shell loss, it is still a lot better pricing than $30.00 - $40.00 per pound, plus the food quality cannot be matched.
