These are freshly shelled pine nuts from Penny's Pine Nuts. They were shelled with George Frazier's pine nut sheller, which we are giving away to clients ordering 1,000 lbs or more of our Jumbo American Pinyon Pine Nuts
Last year, George put together an awesome little pine nut processing system. It removed about 85 -90 % of the shell and inner skins from the pine nuts. The problem was sorting out the kernels from the shells. Recently we add a component to the system which separates the shells from the nut meats - thus the machine produces lovely pine nut kernels. I have been meaning to update our film, as the new and improved cracker, peeler, sorter produces a great pine nut product, in a cost effective manner. A fellow in Afghanistan wanted two machines. He explained all their kernels were peeled by hand and honestly, I was not surprised. We had his species of native pine seed on hand. (Oddly enough, I collect pine tree seeds).The Afghani pine nut is long, thin and covered with a soft shell. Unfortunately, the kernel is so thin, that there is not sufficient mass upon impact to shell the species. We referred him to our first design, a roto cracker, which was based on simple mechanical process. If kernels are uniform in width, this is a cost effective way to shell pine nuts. However, the Nevada soft shell pine nuts have a great deal of variation in their demensions, which is why we designed this type of pine nut sheller, cracker, peeler, seperator. We get calls from all over the world, and this week alone - I had contact with Italy, New Zealand and Russia about our American pine nuts and people wanting to contract for 2011. We are sadly, out of pine nuts, working on our farm - planting and harvesting the first native blooms. Pine nut work will have to take a back seat for a bit. Provided this year's harvest is good, those who wanted contracts last year with the pine nut shellers, should be able to get our units.
